Coutellerie Au Sabot is a 100-year old cutlery maker offering an exclusive collection of regional knives.
The Au Sabot cutlery firm is first and foremost the history of a family. In 1870 Etienne Fontenille, at the
time a cutlery maker, registered the LE SABOT trademark at the commercial court in Thiers. There were
then several successive owners. In March 1973, Jean Sauzedde took over the trademark which has
remained a family business since that date. Over the years, the range was to expand through the buyout
of other cutlery companies.
The new generations of the Sauzedde family are carrying on five centuries of know-how in the Thiers
cutlery trade and their knives are designed as real instruments destined for intensive use. Handcrafted

This knife is made of olive wood from Corsica, an island of contrasts, welcoming, far and yet near at the
same time. When the Corsican shepherd takes his knife out of his pocket, the ratcheting of the spring
makes people who may not have heard it jump. He places it conspicuously beside his plate and compels
everyone's respect.
This knife features a 440 hand forged polished stainless steel blade, stainless steel pull ring locking
mechanism and full Olive Wood handle with adjustable pivot pin. The Corsican emblem and the name is
carved into the Olive Wood.
